If I am understanding correctly....

I use php/xajax to populate the autocomplete field (#breed) with a value / label array. When a jQuery select/change event fires, I write that value to a hidden field (#breed_id). When my php edit function fires I run this jQuery script to initialize & set the default value / label to whatever the value was in the DB via the last 2 lines of jQuery code.

Hope this helps, I am pretty new to jQuery and a JS novice so if anyone has a better idea I would love to hear it.
