When using a navbar, it does not appear possible to hide the text with data-iconpos="notext".

Its possible to hide the text, may be you are using in wrong way, use as below, its work for me:
<div data-role="navbar" id="navbar" data-iconpos="notext" >
<ul id="nav">
<li><a href="#details" class="tab" data-icon="myapp-share">Details</a></li>
</ul>
</div>

Well, that's not quite right. Yes, it does hide the text, however I end up with square buttons that do not fill up the entire space for the nav button.

the easiest solution would be to omit the text of the link.
