you would have to get the position and store it in either a cookie or a storage location on the server (such as a database)

Check out the event arguments on the Sortable events.  In your case you probable want the start or stop event.
ui especially has information about where the placeholder is, where the element used to be, and where the dragged item was when you let go of it.
