How to change list/menu/nav bar colors?

Hey guys,
I have tried the Theme Roller website but it doesn't come out correctly when I view the page.
Does anyone know the actual part of the CSS code that controls these different colors? I'm used to managing websites where I create all the CSS rules but with JQuery there's like 300 CSS rules already stated & I don't really know which of them controls what I am looking for.
If you go to http://jquerymobile.com/demos/1.1.0/, those are the kind of lists I am trying to change the color of. So instead of a white bar - I want it to be another color & the text a different color as well.
